Our olives are picked at optimal ripeness — never too early, never too late. It’s a balance between yield and flavour, guided by instinct, timing, testing, the weather forecast and ultimately, experience.
Within hours of harvest, our olives are cold-pressed at temperatures below 27°C, preserving delicate flavour compounds and health-boosting polyphenols that give our oil its depth and nutritional integrity.
Each batch is assessed for both chemistry and character and is independently tested. Only oils that meet our standards for balance, aroma, and depth are bottled under the Frankly Portugal name.
We bottle in UV-protected glass to prevent oxidation, and ship under temperature-controlled conditions. These aren’t extras — they’re essential to delivering olive oil that actually tastes the way it should.
